This hearty breakfast bowl is the perfect on-the-go breakfast. It is super filling and delicious. No sugar or processed ingredients like most on-the-go breakfasts and completely customizable.

Breakfast is my favorite meal of the day. There is nothing like the combination of sausage, eggs, hash-browns, and pancakes with a fresh glass of orange juice and a mug of hot coffee to start the day off right!

But who has time to cook a big gourmet breakfast every morning? – Not I. Around here we tend to save that for special occasions or the weekend.

This quick breakfast bowl recipe is a close second favorite of mine and is a nice little glimpse of a big fancy breakfast. It’s so simple and can be made in large batches ahead of time to last the rest of the week.

You can easily mix it up or tailor it to each persons likes/dislikes.

So here are the basic components of the hearty breakfast bowl – breakfast meat, eggs, cheese, favorite spices or herbs or toppings and an optional side of fruit. The great thing is this meal never gets old because there is room for so much variety!

This is my go-to breakfast bowl:

  • ground breakfast sausage
  • topped with a fried egg
  • shredded cheddar cheese
  • a little salt and pepper
  • sliced avocado
  • with a side of blueberries and coffee – hearty, healthy, and delicious.

Breakfast Bowl Ingredient Ideas:

  • bacon
  • ground sausage
  • sausage links
  • turkey bacon
  • canadian bacon
  • breakfast pork chops
  • scrambled eggs
  • fried egg cooked as desired
  • favorite shredded or sliced cheese (cheddar or colby-jack are my fav)
  • salt and pepper
  • cayenne
  • sriracha
  • spinach
  • avocado
  • tomato
  • sauteed veggies (onions, peppers)
  • favorite herb: parsley, oregano, dill, thyme

Hearty Breakfast Bowl Instructions

  • Start by cooking your meat and eggs. (I usually get two iron skillets going on the stove and make a big batch)

  • Next season eggs with salt and pepper. And if you are going the scrambled route you can add in your spinach while cooking to get them nice and wilted.

  • Shred your favorite cheese
  • Last slice or chop herbs and veggies
  • Assemble your bowl and enjoy!

Prep Ahead Instructions

On Sunday afternoon or Monday morning I sometimes go ahead and make a big batch of my ingredients. That way they are cooked and stored in the fridge ready to pull out and combine for a quick breakfast.

Disclaimer: I don’t always put that much effort into planning ahead and this recipe is actually just as easy to whip up in a small batch each morning. In small quantity sausage and eggs cook up really fast and honestly fresh is always tastier! That being said, sometimes it is nice to wake up and not have to think about ‘cooking’. Just quickly warm up the ingredients and you are good to go.

I start by cooking 1 pound of breakfast sausage (make your own here) and then in a separate skillet a big batch of scrambled eggs (in my experience fried eggs aren’t that great cooked ahead of time, but if you aren’t picky about it you can definitely do that too) seasoned with salt and pepper. You could also add in the spinach now so that it will be nice and wilted in with your eggs.

Easily store the sausage and eggs in separate airtight containers in the fridge and it will last for about 4 days.

You can go ahead and shred up enough cheese for the week and store in an airtight container. Next, prep any other toppings.

Clean and slice fruits or vegetables ahead of time if possible to make the process even quicker.

That’s it! Each morning you can put a bowl together and warm it up. I like to heat my sausage and eggs in a cast iron skillet then serve in a bowl with toppings and a small bowl of berries or sliced apples or pears.

  • Ground Sausage
  • Fried Egg (over medium)
  • Sliced Avocado
  • Salt and Pepper
  • Fresh Herbs (optional)

Make a large batch ahead of time and store in fridge in separate airtight containers for up to 4 days.
