This balsamic greek salad is so fresh and delicious! The perfect healthy lunch or side. Quick and easy to chop the veggies and whip up with just a few ingredients!

This greek salad recipe is always on repeat at our house, in the summertime especially! It’s simple, quick and so fresh on a hot summer day. We love it for a light lunch or snack or paired with grilled steak or smoked ribs and baked potatoes for a nice dinner.

In the spring and summer, I shoot for lots of fresh vegetables when I’m thinking about our meals. We love fresh salad from the garden with spinach and a variety of lettuces, but after so many salads it’s nice to mix it up with something else equally as fresh but with a twist! This recipe is just that.

Even my kids love this delicious salad and are often picking from it before I get it to the table!

KITCHEN TOOLS YOU WILL NEED

  • Sharp Knife
  • Potato Peeler
  • Cutting Board
  • Medium Size Bowl
  • Wood Spoon

INGREDIENTS FOR GREEK SALAD

  • 2 Cucumbers – peeled and chopped
  • 2 Roma Tomatoes – chopped
  • 1/4 or 1/2 of a Purple Onion – thinly sliced
  • 1 Can of Olives -sliced
  • Olive Oil
  • Balsamic Vinegar
  • Salt and Pepper
  • Fetta Cheese

INSTRUCTIONS FOR GREEK SALAD

To make this recipe simply peel, chop, and slice veggies, add to bowl, season, add oil and balsamic vinegar and ta-da you have an amazing fresh greek salad!

I start with peeling and chopping the cucumbers into bite size pieces.

Next, chop the tomatoes and slice the olives.

When it comes to the purple onion I like it sliced very thin! It’s a bit strong if left chunky and the texture is much more enjoyable when sliced thin.

Add a drizzle of olive oil and balsamic vinegar. Season with salt and pepper then mix well. Serve individual bowls with an extra splash of balsamic vinegar and topped with fetta cheese.

Ingredients

  • 2 Cucumbers - peeled and chopped
  • 2 Roma Tomatoes - chopped
  • Purple Onion - thinly sliced (half or to taste)
  • 1 Can Sliced Olives
  • Olive Oil
  • Balsamic Vinegar
  • Salt and Pepper
  • Fetta Cheese

Instructions

  1. Peel and chop cucumbers, chop tomatoes, very thinly slice purple onion, and slice olives.
  2. Add chopped veggies to a medium bowl and drizzle with olive oil and balsamic vinegar.
  3. Season with salt and pepper.
  4. Serve with a little extra balsamic vinegar and feta cheese on top.

Notes

This greek salad is perfect for a fresh, light snack or lunch or easily pair it with grilled steak or chicken and baked potatoes for dinner.

You can easily adjust this recipe for one or for a crowd!
