These easy overnight refrigerator dill pickles are so crunchy and delicious! Quick and easy way to use up those garden fresh cucumbers and keep on hand for snacking and recipes.

Every year I hear of gardeners being overwhelmed with cucumbers in their garden! I don’t have that problem quite yet as our garden is still quite small, but if I did this would be the perfect recipe for using up all of those delicious and nutritious cucumbers.

When everything pops up in the garden at once you definitely don’t want any of that hard work to go to waste. So these overnight pickles are a quick and easy way to put those extra cucumbers to good use! We did get a few wonderful pickling cucumbers this year and I saved a few for this recipe. I will definitely be focusing more on cucumbers in the garden next year because these are so delicious!

While these pickles are wonderful for snacking or a side dish they also go great in recipes like homemade potato salad or deviled eggs.

HOW LONG DO REFRIGERATOR DILL PICKLES LAST?

You can store pickles in a glass air-tight container in your refrigerator for up to 4-6 weeks. These are quick refrigerator pickles, not sterilized canned pickles, so they cannot be stored in your pantry.

WHAT KIND OF CUCUMBERS SHOULD YOU USE FOR REFRIGERATOR PICKLES?

If you want that perfect crunchy pickle its best to go with a pickling cucumber variety, but you can use any kind of pickle in this recipe if you aren’t to ‘picky’.

KITCHEN TOOLS YOU MAY NEED

Cutting Board

Sharp Knife

Small Sauce Pan

Measuring cups and spoons

Quart sized Mason Jar

INGREDIENTS

  • 2-3 Pickling Cucumbers
  • 1 Cup White Vinegar
  • 2 Cups Filtered Water
  • 1 Tbs Sea Salt
  • 2-3 Sprigs of fresh dill

INSTRUCTIONS FOR REFRIGERATOR PICKLES

  1. Slice cucumbers as desired. You can cut them into long spears or sliced rounds.
  2. Next, add cucumbers to jar(s)
  3. In a small saucepan heat water, vinegar, and sea salt until the salt is dissolved.
  4. Then pour mixture over cucumbers until the top of the pickles are covered
  5. Add sprigs of dill, put the lid on, and store in the refrigerator.
  6. They will be ready to enjoy in 24 hours!

Optional:

If you like sweet pickles you can also add a bit of sugar or for a bit of heat add red chili flakes. I personally like them with just the salt and dill. Simple, easy, and really delicious.

Pickles will last in the refrigerator for 4-6 weeks.
